Aioli (with a light hand), rosemary and fresh green jalapeño and poblano. The best available potato works for me, but I prefer them to hold their shape.

But I like variety. Today I made an American southern mashed-potato type with a pow of sweet relish and more eggs than I use (when I use them). It tasted exactly like grocery-chain potato salad, which uses rubber eggs. At least the homemade tasted homemade, but never again.

Japanese style. No sugar or anything sweet except for a bit of shredded carrot. Mayo, peeled potatoes, maybe some cucumber (pre-salted and squeezed of liquid). Etc.

Am I the only one who puts celery in mine? I like the crunch. Skin on gold taters, celery, very finely sliced red onion, salt, pepper, mayo, mustard, and hot sauce. Lightly mashed and stirred around to incorporate.

I don't make potato salad with mayo if we're eating outside. I save it for winter.

I chose French style in your poll, OP. Oil and vinegar (red wine or champagne), a tiny bit of Dijon mustard, and whichever herbs I'm in the mood for. At least basil and parsley, and maybe dill and tarragon if I'm making an especially large batch. I might use just cilantro and parsley if complements the menu and I know everyone likes cilantro. I may use green onions.

Never: hard boiled eggs, regular onions.

Make a regular southern style potato style and then fold in raw lox (salmon) but be careful of any salt that you add because the lox/salmon is salty. DELICIOUS!!! I first tasted it made like this in Paris.

Another delicious add in (and surprisingly so) is a regular southern potato salad and then fold in half almonds. DELICIOUS!!! I first had it served this way in the Bahamas.

I just made some:

2 lbs. of peeled potatoes, sliced and sprinkled with red wine vinegar. Salt, pepper, mustard powder, celery, Italian leaf parsley, scallions, gerkins.

Usually I add 2 chopped, hard boiled eggs but those I had weren’t fresh today, so I skipped that. (They floated in water - which is supposed to be a bad sign.)

Just made some as well ....

5 Russet potatoes, peele, cubed and boiled for 12ish minutes.

4 eggs. Hard boiled, sliced.

Few tablespoons of dill relish. Patted dry.

Chopped celery & onions.

Capers.

Sliced olives.

Made it this afternoon...

1 lb. bag of small, red and yellow potatoes (did not peel them after boiling)

Scallions, celery, cut up dill pickle spears, two hard boiled eggs, mayonnaise, mustard, splashes of pickle juice

Had barbecued chicken with it...

Had the butcher cut up a whole chicken into eight pieces, Salt the chicken pieces then mix them up in...

A mixture of Russian dressing, small jar of apricot preserves, and a package of French onion soup mix...

Bake at 375 for an hour in a baking dish covered with aluminum foil...

After an hour, bake uncovered for another 30 minutes

Absolutely delicious!

I like loaded baked potatoes...warmed up. Cold loaded baked potato salad does nothing for me.

The best one is a Greek version with fresh herbs, olive oil, some feta, and finely chopped vegetables (of your choice), as well as some olives thrown in.

Okay... I tried something different. I roasted my potatoes and then made my regular potato salad. The results? No difference in taste. The difference is that it took much longer to make the salad.

We shall not be doing that again...

I think many of these are fine. Red baby potatoes should be unpeeled and take a mustardy champagne vinegar or white wine dressing and fresh herbs.. Idaho potatoes need to be peeled and go in various directions. It's also tricky to get the potatoes cookd but not broken down.

I like deviled egg potato salad with red bell pepper, onions, mayo, mustard. Important to crush some of the hardened yolk in the dressing and use only a portion of the whites, chopped finely, But I see the appeal of German, Japanese and loaded baked potato salad.
